Vegetable and Cheese Grilled Sandwich: A Wholesome Comfort Food!

Last week, I came back from a two-month long vacation in Kolkata, my hometown. It was not easy for me to leave back my parents, my near and dear ones for a while and travelling back all alone made it even worse. As soon I reached here, I was down with flu and a severe attack of cough. I was in bed for couple of days, homesick and jet-lagged. Long calls over the phone and skype back home made me feel better but it took a while to bring me back in form. I did not bother to cook the past few days as my husband took over the kitchen. As soon as I felt better, I craved for some homemade sandwiches with a cup of piping hot coffee.

I tried making this Vegetable and Cheese Grilled Sandwiches and it came out great. It is easy to prepare yet tasty and delicious to eat. A great lunchbox idea for office or school. I made a white sauce to coat the vegetables so that it makes the sandwich creamy and delicious but it is optional.

You may just lightly sauté the vegetables and follow the rest of the process. Try this vegetable sandwich and I am sure you would love it!

Grilled Vegetable and Cheese Sandwich

Preparation Time: 15 mints                                         Cooking Time: 10-12 mints

Serves: 2

Ingredients

1 medium carrot

½ green bell pepper

½ red bell pepper

½ cup frozen sweet corn thawed

1 small red onion

1-2 cloves of garlic

4 tablespoons butter

2 tablespoons flour

4 tablespoons milk

¼ cup grated cheese

Salt to taste

½ teaspoon freshly ground black pepper

¼ teaspoon Italian Seasonings

4 slices of sandwich bread of your choice

Method

Finely chop the vegetables and set aside. Crush the cloves of garlic. In a frying pan at medium heat, add 2 tablespoons of butter. Add the crushed garlic and cook till it is aromatic, about 30 seconds. Add the finely chopped onion and stir till it is light pink in color. Now add the flour and stir together for a minute. Add the milk and stir continuously so that it forms a smooth consistency. Add the finely chopped vegetables and thawed sweet corn and mix well. Add the Italian seasonings, salt and black pepper to taste and mix well. Do not overcook the vegetables.

The vegetables should be crisp. Switch off the flame and set aside.

Heat a grill pan at medium. Meanwhile butter two slices of bread and add filling to each one of them in equal amount. Add the grated cheese and cover with another slice of bread. Add butter on the grill pan and carefully place the sandwich and grill on both sides until lightly golden brown in color with grill marks. Cut into quarters and serve hot with your choice of dip or ketchup along with a cup of coffee.

Tips

If you want to pack in your lunch box for office or school, wrap the sandwiches with aluminum foil so that it will remain warm for a longer time.
