Our Managing Editor, Anumita, shares the recipe of mango cheesecake, which does not involve any baking. An interesting addition to the Christmas party spread, in the weekly column, exclusively in Different Truths.

Mango is a tropical fruit, but available in most parts of the world. Its fragrance and sweet tangy flavor have earned much love from most fruit lovers. In the culinary society, mango has been used to make starters, snacks, main course, and desserts.

Being a Bengali, my sweet tooth is the strongest. Everything has a potential for dessert, well, most of them. Although I love to bake but would enjoy a dessert which does not have much cooking and baking involved.

I found the best of two worlds, my love for mango and no baking method at a friend’s dinner party. She had prepared a mango cheesecake, which involved no baking.

After getting the procedure from her I dared to attempt one at home.

It turned out beautiful and delicious.

Would like to share it with you all, and hope that you will make one and enjoy it with your loved ones.

No Bake Mango Cheesecake

Type: Dessert                                For: 6 to 8 persons

Prep time: 20mins                          Cook time: none

Crust

  • 1cup crushed graham crackers (you can you use either the chocolate or the plain variety)
  • 4 tbsps. melted butter
  • 3 tbsps. brown sugar

Filling

  • 1 tsp 8 oz. cream cheese
  • vanilla extract
  • 2 ½ cups of mango pulp
  • 2 cups of frozen mango slices or chopped
  • ¾ cup of confectionary sugar
  • 2 tbsps. warm water
  • 1 tbsp. unflavored gelatin
  • 2 tbsps. sugar (if you like it sweet)
  • 8 ox of heavy whipping cream

Method

Grind the graham crackers and put in a flat bottom bowl.

Pour in the melted butter and the brown sugar. Mix well and pat it down hard at the bottom the bowl. It should form the base.

In a separate bowl combine the gelatin and water mix well.

Add the 1 cup of the mango pulp,1 cup of defrosted chopped or sliced mangos and sugar. Mix well.

In a separate bowl mix cream cheese, confectionary sugar and vanilla extract. Mix it with a hand mixer.

Whip the whipping cream and add it to the cream cheese mixture. Blend with a hand mixer.

Then add the rest of the mango pulp into the mix and blend again.

Pour the content on the graham cracker base. Smooth it out

Now carefully pour the gelatin mix and smooth it out.

Decorate with the rest of the sliced or chopped mangos on the top.

Refrigerate the mix for a minimum of five hours or more.

Before serving, use a sharp knife to cut the edges from the bowl, cut into slices and use a spatula to take out the slices.

It can be served with a dollop of whipped cream on top or any sprinkles.

Enjoy the sweet mango treat.
