During the fall, the harvest season is in full swing in the US. Apples flood the market in every size, shape and colour. In the grocery stores, these fruits fill up counters after counters and give a beautiful festive look. From Red Delicious, Golden Delicious, Granny Smith, McIntosh, Rome Beauty, Fuji, Jonathan, York, Gala, and Yellow Newton and many more. Cutting, peeling, chopping, slicing and layering of this fruit is the most happening thing of this season.
My friend Barbara used to make the most lip-smacking apple cake. Before she left my city, I made it a point to learn it from her.
After trials and errors, I have perfected the art of making this cake. With its crispy corners and soft fluffy yet fruity inside, it has become a hit among my friends. Often during our get-together, I am asked to make this cake.

Apple Cake
Prep time: 15mins Cook Time: 45mins
Type: Dessert Serves: 18 pieces
Ingredients:
Apples (peeled and chopped) 2big/3medium
Flour 2cups
Eggs 2nos
Oil 1cup
Sugar 1 ½ cups if apples are sweet or 2 cups if apples are tart
Baking soda 1tsp
Salt 1tsp
Cinnamon powder 1tbsp
Vanilla essence 2tbsp
Oil to spray
Method:
In a mixing bowl whip the eggs and mix in the oil.
Add the sugar and incorporate it into the mixture.
Add the chopped apples and vanilla essence, mix well.
In a separate bowl, sieve flour, baking soda, salt and cinnamon powder.
Slowly incorporate the dry mix into the wet one.
Preheat oven to 350⁰F.
Spray oil on a glass rectangular bowl and pour the mixture into it.
Bake for 45mins and check the center with a toothpick.
Once done, switch off the oven; keep the cake in the hot oven for another 5mins with the door a bit ajar.
Then take it out and allow it to cool. Cut and serve with chocolate drizzle, whipped cream, or just simple.
