Grilled Chicken and Mango Salsa: Two Summertime Grill – II

Anumita caps the Summer cookout, in the US. She shares two dishes, this week, in the second and final part of the write-upAn exclusive for Different Truths.

Continuing from the last week’s cookout spread, today we will be wrapping up the rest of the dishes.

During the cookout, put out some fruits of the season, cleaned and cut into bitesize. Add a few chips and dips and different types of drinks. The party should have a continual feeling. Family and friends munching, and cooking is always a fun experience.

At the end make the grilled chicken and while it is cooking chop the mango salsa.

Grilled Chicken

Ingredients:

Leg quarters 8, skinned and scored

Tandoori masala ½ cup

Garlic and ginger paste ½ cup

Yogurt ½ cup

Mint and cilantro paste ½ cup

Oil 1 tsp

Method:

Take a small knife and scoop the mint and cilantro paste and push it into the scored markings on the leg quarters.

Whip the yoghurt, oil, garlic-ginger paste and tandoori masala.

Coat the chicken pieces the night before and keep it in the refrigerator.

Take out the chicken 2 hours before the grill, so it can be in room temperature.

Place the leg quarters curved side down first and grill flipping over time to time.

Grill till lightly crisp on the outside and well-cooked inside.

Use a small knife or fork to check the inside of the meat.

Serve with green chutney.

Mango Salsa

Ingredients:

Half ripe mango 2, peeled and cubed

Salad cucumbers 3, cubed

Roma tomato 1, cubed

Red onion 1, chopped

Cilantro ½ bunch, chopped

Avocado 1, peeled and cubed

Fresh lemon juice 1 tbsp

Coarse salt to taste

Coarse ground pepper

Method:

Toss all of this together and sprinkle with salt and pepper.

Now you are ready to dig in for the final course. A cookout is very versatile, you can mix and match anything, which can be finger food. Enjoy nature, laughter, good and healthy cook and eating.
