Egg Malai Masala: An Interesting Twist to Egg Curry

Eggs are a very versatile ingredient. It can be used for all type of meals, be it breakfast, lunch, dinner, dessert or even snacks.

My family loves egg curry. It is one of the main dishes for lunch or dinner. Egg curry can be prepared in many ways. I chose one of the easiest recipes. Egg Malai Masala was a recipe I grew up with.

While searching through my old diaries, I found this recipe handwritten by Ma. So here is the recipe for Egg Malai Masala.

 

Ingredients

12 eggs

2 big onions

2” ginger

2 cups milk/ 1 cup yogurt mixed with 1/2cup milk

Few green chillies

Cilantro leaves chopped

1 tsp garam masala

2 tbsp ghee/clarified butter

Salt to taste

 

Method

Boil the eggs and peel.

Grind onion and ginger and some chillies.

Heat ghee and fry the onion paste for about a minute.

Add the salt and the eggs.

Slowly incorporate the milk or the yogurt mixed milk.

Lower the heat and stir slowly.

Add the milk.

Then sprinkle garam masala and simmer on low heat till gravy thickens.

Sprinkle chopped cilantro and sliced green chillies.

Serve hot with naan or steamed white rice.
