Comfort Food: Delicious and Healthy Chocolate Cake Boosts Energy and Mood

Chocolate is the most popular flavor in the world. It is been used in all kind of desserts, drinks, and recipes. It is said that chocolates especially the dark variety has health benefits. Dark chocolates are nutritious, rich in antioxidants, help blood flow by reducing blood pressure and raise HDL and reduce LDL. Chocolate is the answer to everything. That is what everyone says and I believe it too. All of us have that craving for that brown sweet thing in a form of a drink, bar or in desserts.

Chocolate is an ancient ingredient which came from the Cacao seeds cultivated in Mesoamrica centuries ago. There are various evidences in history that chocolate extracted from these seeds were used in form of a drink. The bitter taste of these seeds needs to be processed to get to its actual flavor.

During the winter months in my city, we are often snowed in. The sky is often gloomy and the cold leads to demotivation and less energy. A comfort food usually helps to boost it all. My children and I bake chocolate cake with tons of chocolate chips in it. When the cake is in the oven the whole house is warm with the aroma of chocolate. All we need to do after that is to slice into the warm chocolate cake, and feel happiness spread all over.

Here is the recipe of the simplest chocolate cake with sprinkle of chocolate chips to spread the happiness from my hearth to yours.

Chocolate Cake

Prep time: 20 mins                                          Cook time: 35 mins

Serves: 10/15 slices                                          Type: Dessert

Ingredients

All purpose flour 2 ½ cups

Eggs 3

Sugar 2 cups

Unsweetened Cocoa powder 1 cup

Sour Cream 1cup

Vegetable oil ¾ cup

Baking soda 1 tsp

Baking powder 1 ½ tsp

Vanilla extracts 2 tsp

Salt 1 tsp

Chocolate chips 2 ups

Cooking oil spray

Method

Mix the cocoa powder in 1 ½ cup and boiling hot water till it is a smooth paste. Keep aside. Preheat oven to 350 F and spray the baking pan. If you are using a metal pan, line it with parchment paper; glass pans do not need parchment paper.

Sieve the sugar, flower, baking powder, baking soda and salt till they are mixed well. Add the egg, oil, sour cream and vanilla and used either the hand whisk or the electric mixer till it becomes a smooth paste.

Slow down the speed and mix in the cocoa mixture in batches till the whole thing is well incorporated. The batter will be of thin consistency.

Pour it into the pan and sprinkle in the chocolate chips into the batter. Bake it for 30 to 40 mins. Check the center with a toothpick after the 30 mins is over.

Once done, transfer to the cooling rack for 10 mins. Pry out the sides and then flip it over, or you can cut it in the tray and serve warm pieces.

Let the chocolate cake fill you with happy feelings.
